Ingredients
1 kg beef chuck
2 tablespoons wholegrain mustard
3 tablespoons olive oil
2 cloves of garlic, chopped
2 sprigs of fresh rosemary
1 tablespoon balsamic vinegar
Salt, freshly ground pepper
Instructions
In a mixing bowl, combine the mustard, oil, garlic, rosemary and vinegar. Brush the beef chuck generously with this marinade. Cover and leave in a cool place for at least 4 hours (overnight is even better).
Light your charcoal barbecue and prepare a good bed of embers. Prefer an indirect cooking zone, as chuck needs a little more time.
Sear the meat over high heat for 2 minutes on each side to brown it.
Then move the chuck to the indirect zone, close the lid and cook gently for 25 to 30 minutes, turning it regularly. My Barbecue tip: this technique turns a rustic cut into tender, juicy meat.
Let the meat rest for 10 minutes under a sheet of foil before slicing it thinly.
