Ingredients
1 pork loin roast of about 1 kg
2 to 3 tablespoons olive oil
Spices of your choice (cinnamon, cloves, ginger)
2 tablespoons honey
Salt, pepper
Instructions
Take the meat out of the refrigerator about 30 to 60 minutes before cooking to avoid thermal shock and ensure even cooking.
Brush the roast with olive oil, season with salt and pepper, then apply the spices to flavour the meat.
Preheat your barbecue: if you are using a charcoal barbecue, wait until the embers are glowing red with no flames.
Place the roast on the grill for indirect cooking: put the embers on one side so that the heat cooks the meat gently, as in an oven.
Cook slowly over moderate heat for about 1 to 1.5 hours depending on size, turning from time to time for even cooking.
About 10 to 15 minutes before the end, brush the roast with the honey to create a lightly caramelised, fragrant crust.
Let the meat rest for 5 to 10 minutes before carving for tender, juicy meat.
