Recipe for pike cooked in a wood-fired oven

Discover our whole pike recipe cooked in a wood oven: delicate flesh flavored with lemon, rosemary, and olive oil. Simple, tasty, and perfect for celebrating the start of the fishing season.
    Ingredients
    • 1 whole pike, gutted and scaled
    • 1 lemon, sliced
    • 2 sprigs of fresh rosemary
    • 4 tablespoons extra virgin olive oil
    • Salt and freshly ground black pepper
    Instructions
    1. Preheat your wood-fired oven to about 200°C.
    2. Wash the pike inside and out and pat dry with kitchen paper. Make a few diagonal cuts on both sides to help it cook through.
    3. Season inside and out with salt and pepper. Place lemon slices and rosemary sprigs inside the cavity. Drizzle with olive oil.
    4. Lay the pike on a lightly oiled baking tray so that it does not stick.
    5. Put it in the oven and cook for 25 to 30 minutes, checking regularly. The pike is ready when the flesh is opaque and flakes easily with a fork.
    6. Serve with extra lemon wedges and fresh herbs.
