    Chicken Potato Wood Oven

Discover our recipe for chicken with potatoes cooked in the Maximus wood oven: crispy skin glazed with maple syrup, smoked bacon bits, and tender potatoes with thyme. A classic comfort dish elevated by the wood fire.
    Ingredients
    • 1 chicken of 1.6 to 1.8 kg
    • 1.5 kg potatoes
    • 8 g salt
    • 40 g diced smoked bacon or lardons
    • 1 shallot
    • 20 g maple syrup
    • 30 g butter
    • A small bunch of thyme
    Instructions
    1. Light the Maximus oven in advance, loading the wood on one side (floor not too hot).
    2. Cut the potatoes into large cubes (3–4 cm). Put them in cold water and bring to the boil.
    3. Put the sliced shallot inside the chicken. Brush with maple syrup, scatter the bacon pieces over the chicken and into the joints. Season lightly with salt.
    4. Put the chicken in the oven when it is hot but without lively flames. Close the air intake on the door to create smoke.
    5. When the water boils, add the thyme to the potatoes. Cook for 7 minutes then drain.
    6. After the chicken has cooked for 1 hour, add the potatoes to the dish with a little water to deglaze. Cook for another 30 minutes. Serve with a green salad.
