Before pouring a single concrete footing, you need to clarify the fuel type, the built-in niche, the ventilation and the warranty. Here's the order in which I check all of it.
Most of the unpleasant surprises I've seen with outdoor summer kitchens come down to one single mistake: someone gave the mason the dimensions of the Grate instead of the niche. The result is that the appliance doesn't fit, or it fits but you can no longer pull out the ash drawer without dismantling the front panel. A masonry outdoor kitchen can't be fixed with a screwdriver. So check it beforehand.
A built-in Grill isn't necessarily a gas barbecue. Many people assume the opposite and apply gas connection rules to an appliance that actually runs on wood or charcoal. What fuel, and why it's the first question
The Type of fuel determines everything else: the strength of the support, ventilation, connection, and clearances. Before talking about dimensions or material, identify precisely how the appliance works.

The French standard NF EN 498, referenced by AFNOR, applies exclusively to barbecues running on liquefied petroleum gas, i.e. butane or propane. It is not the reference standard for a charcoal Grill. Take the AC46F built-in Grill: this is an iron Grill for wood-fired or charcoal cooking. It doesn't connect to anything. If you go for this Type of model, you don't need to look for a regulator or a hose, but you do need to pay close attention to the strength of the support and the removal of embers.
Check the built-in recess, not the cooking surface
This is the most common mistake, so let me repeat it differently: the Grate and the recess are two different measurements, and it's the recess that dictates the masonry work.
A proper technical data sheet should give you at least four things: outer width, outer depth, total height, and the dimensions of the recess to be provided. The AC46F clearly illustrates the difference. The complete appliance measures 60 × 38 × 36 cm. The stated recess, meanwhile, measures 53 × 34 × 11 cm. And the ash collection drawer measures 51 × 47 cm, so deeper than the structure itself, precisely to catch any overflowing ash.
If you only give the mason "53 × 34", you're forgetting the rim that rests on the worktop, the clearance of the lid, and above all the travel of the drawer.
Before finalising the recess, also check:

access to the handles, Grates and trays;

the weight supported by the worktop;

the ability to remove parts for cleaning.
The useful questions to ask the seller: are the recess dimensions minimum or exact? Is an installation clearance needed? Does the Grill rest in place or does it need to be fixed? Does the drawer slide out without dismantling the cabinet? And above all: is there a dimensioned built-in installation diagram?
The heat resistance of the support
A built-in Grill does not fit into just any cabinet. A wood- or charcoal-fired model produces embers, smoke and high temperatures. Decorative wood, certain laminates, composite panels and coatings not designed for heat have no place in direct contact with the firebox, unless protection is explicitly provided by the manufacturer.
What to look for on the worktop:

For a gas model, the instructions often require a non-combustible worktop, a ventilated enclosure and precise clearances. These distances vary from one model to another. A Broil King built-in Grill manual, for example, requires a non-combustible surface and distinguishes clearances depending on whether the wall is combustible or not. Never generalise a distance read on another appliance.
Ventilation and genuinely outdoor cooking
The term "outdoor kitchen" doesn't guarantee anything on its own. What matters is whether the space is truly open. Completely open? Covered but open on several sides? Under a combustible roof? Close to a door or air vent?
The Anses reminds us that a barbecue should not be used in an enclosed space such as a garage, nor in strong wind, and that a means of extinguishing it should always be within reach. It's just common sense, but I regularly see Grills installed under overhangs that are too low, where smoke lingers.
For a wood- or charcoal-fired Grill, your ventilation checklist:

An indoor kitchen hood is not designed for the heat, greasy smoke, and embers of a barbecue. Don't reuse it just for convenience.
For a gas Grill, the enclosure must be ventilated according to the instructions. Ventilation openings cannot simply be replaced by ordinary cabinet doors. The manual for a built-in gas Weber model recommends cross-ventilation with high and low openings on at least two sides of the structure, to prevent gas buildup in case of a leak. Remember this rule: the enclosure alone is not enough—you also need the exact model's ventilation requirements.
French gas regulations, only if the model is gas-powered
This chapter does not apply to the AC46F or other charcoal Grills. It applies to gas appliances, and it's worth reading before you buy.
The CNPG states that only appliances designed for outdoor use can be installed outside, and that barbecues are among the outdoor appliances covered by the decree of February 23, 2018.
On the connection: for an appliance used outdoors, the flexible hose can be up to 5 meters long when it is metal, depending on regulatory conditions. The hose must be suitable for gas, accessible, protected from hot parts, and replaced before its expiry date. The CNPG also states that a certificate of conformity is not required for a gas barbecue directly connected to a cylinder by a flexible hose or tube, in the configuration concerned. This does not exempt you from following the instructions and checking for leaks.
What you should never improvise: an incompatible regulator, a hose that's too long or not inspectable, a pipe exposed to flames, a natural gas fitting on an LPG appliance, or a cylinder enclosed without ventilation.
For propane cylinders, those over 3 kg must stay outside living areas. Standard practice calls for a stable, level surface, a distance of at least 1 meter from openings at the same level or below, and at least 1 meter from unsiphoned drains. So no, you shouldn't automatically hide the cylinder in the cabinet under the Grill. If you place it inside a cabinet, check the ventilation openings required by the manufacturer.
Clearances around the appliance
Ask the seller about the minimum distances from side walls, the back wall, combustible materials, the roof, storage areas, curtains, and plants. These distances aren't uniform: they depend on the fuel, the power output, the lid, and the type of walls.
As an example, a Broil King manual specifies 153 mm between the grill and a non-combustible wall, but 305 mm with a protected combustible wall, plus specific requirements under the worktop and above the cooking area. Good practice comes down to one sentence: request the installation manual before buying, not after building.
Materials: check part by part
"Stainless steel" or "sturdy" means nothing on its own. Examine the material part by part: firebox, Grate, Grate thickness, screws, handles, hinges, ash drawer.
Iron offers great thermal inertia but needs more protection against moisture and corrosion. Stainless steel holds up better outdoors, though it isn't immune to stains, salt, or harsh cleaning products, and not all parts of an appliance necessarily share the same grade. Rather than insisting on a "universal" grade that the spec sheet doesn't even mention, ask for the exact grade of the stainless steel, the thickness of the key parts, and the maintenance procedure. And plan for a cover or shelter.
Ergonomics and maintenance: decide before the masonry work
Once the appliance is sealed in, ergonomics are no longer negotiable. So check beforehand the working height, the visibility of the cooking, whether the Grates can be handled with gloves, and how easily the drawer slides out.
On a charcoal or wood-fired model, the ash drawer must be able to slide out without passing over a food preparation area. Check whether it is sealed and whether the ashes can be emptied without dirtying the front panel. On a gas model, check access to the shut-off valves, the regulator, the hoses, and the burners. A perfectly closed unit that cannot be inspected is a poor choice, even if the appliance fits perfectly into the niche.
What is truly included, and the total cost
"Built-in Grill" does not mean "complete kitchen." Before comparing prices, distinguish the main appliance, the Grate, a possible additional Grate, the ash drawer, the grease tray, the lid, the wind guard, the mounting brackets, and for gas models, the regulator and the hose.
The AC46F product sheet, for example, mentions an iron Grill, an iron Grate, and an ash collection drawer. It does not include a complete outdoor kitchen structure. The real budget is calculated as follows:
Grill + transport + structure or masonry + worktop + possible ventilation + connection + accessories + weather protection + installation.
On the logistics side, the dimensions and weight affect delivery. The MY BARBECUE FAQ states that deliveries are generally free within mainland France depending on the displayed conditions, with lead times varying notably by season, and specifies that some deliveries are made by trucks over 3.5 tonnes. So check the width of the gate, street access, the possibility of a tail lift, and the distance to the kitchen. The AC46F weighs 16 kg, which remains manageable, but a complete stone structure can reach several hundred kilos.
Warranty and spare parts
Break down the advertised warranty between the legal guarantee of conformity, the commercial warranty, the warranty on the firebox, and the warranty on wear parts such as the Grates or the drawer.
In France, the legal guarantee of conformity is mandatory and allows action to be taken for two years from the delivery of the product. It applies against the professional seller, not always directly against the manufacturer, and remains separate from any optional commercial warranty. The AC46F product sheet shows a two-year warranty: ask whether it covers the entire product or only certain parts, and how wear parts are handled.
Urban planning for the outdoor summer kitchen
The Grill alone does not trigger the same formalities as the structure that houses it. It is the pergola, lean-to, or shelter that may be subject to authorisation.

The rules change in protected areas, for an extension, or according to local zoning regulations (PLU), which may impose materials, colors, and distances from boundaries. Check with the town hall before drawing up plans. Avoid concluding that a barbecue "over 5 m²" requires a declaration: it's not the barbecue that counts, it's the footprint of the structure.

Can I just give the mason the size of the Grate?

Is a certificate of conformity required for a bottle-fed gas barbecue?
According to the CNPG, a certificate is not required for a gas barbecue directly connected to a bottle by a flexible or soft tube, in the intended configuration. This does not exempt you from the instructions, the connection rules, or the leak test.
Does the two-year warranty cover the Grates and the drawer?
Not necessarily. The two-year legal warranty of conformity is mandatory, but coverage of wear parts depends on the seller's terms. Ask the question in writing before purchase rather than finding out at the first corroded Grate.
Can I hide the propane bottle in the cabinet under the Grill?
