We are of course familiar with lasagne in the Bolognese style, but it also comes in many other varieties.

For warmer weather, they are particularly enjoyable in a lighter version, with goat cheese and spinach. A true delight enhanced with a subtle smoky flavor thanks to baking in the Maximus wood-fired oven.

THE RECIPE IN VIDEO

Ingredients (for 4 to 6 people)

400g of chopped and drained spinach

50g of leaf spinach

150g of tomato sauce

300 g sliced ​​goat’s cheese

150g of smoked bacon (optional)

250 g buffalo mozzarella

10 g of olive oil

8 lasagna sheets

For the béchamel sauce:

500 g of milk

35g of butter

35 g of flour

1 pinch of salt and pepper

Preparing the lasagna recipe:

Start by making the béchamel sauce. To do this, first make a roux.

  1. Put the butter in a hot pan and let it melt completely, without letting it brown.

  2. Add the flour and let it brown slightly.

Chef's tip: for a light béchamel sauce, don't let it brown too much. For a sauce with a bit more flavor, cook it a little longer.

  1. Add the salt and pepper.

  2. Gradually incorporate the milk, stirring constantly to avoid lumps.

  3. Cook gently, stirring constantly. Let the sauce thicken until it reaches approximately the consistency of yogurt.

Next, assemble your lasagna with a succession of several layers.

  1. Brush the bottom of the dish with olive oil to prevent the pasta from sticking.

  2. Cover with lasagna sheets.

  3. Spread a layer of béchamel sauce.

  4. Add a layer of chopped spinach, then place mozzarella on top.

  5. Repeat the same layers: pasta, béchamel sauce, chopped spinach and mozzarella.

  6. Add another layer of pasta, then cover it with tomato sauce.

  7. Line with spinach leaves and then with goat cheese.

  8. Finally, add a last layer of pasta and cover with the remaining béchamel sauce.

  9. Finish with the goat cheese and mozzarella.

  10. Finally, add the smoked bacon.

Chef's tip: bacon bits are optional; for a vegetarian recipe, simply omit them.

  1. Place the dish in your Maximus wood-fired oven at 200°C. Position the dish in the center and leave it for approximately 35 minutes. Remember to keep an eye on it and rotate the dish occasionally to ensure even cooking.

  2. After 35 minutes, remove your lasagna from the oven. Serve hot and enjoy immediately.
