Christmas recipe: Honey roast pork on the barbecue

Ingredients (for 6-8 people)

  • 1 pork loin roast weighing approximately 1 kg

  • 2 to 3 tablespoons of olive oil

  • Spices of your choice (e.g. cinnamon, cloves, ginger — according to your taste)

  • 2 tablespoons of honey (or a sweet and spicy glaze, as you prefer)

  • Salt, pepper

Suggested side dishes: roasted root vegetables, grilled potatoes, winter vegetables or winter salad.

Recipe preparation

  1. Remove the meat from the refrigerator approximately 30 to 60 minutes before cooking to avoid thermal shock and ensure even cooking.

  2. Brush the roast with olive oil, season with salt and pepper, then apply the spices to flavor the meat.

  3. Preheat your barbecue: if you are using a charcoal barbecue, wait until the coals are glowing red with no flames.

  4. Place the roast on the grill. For a beautiful finish, use indirect cooking: place the embers or fire to one side (or turn off the burners under the meat) so that the heat cooks the meat gently, like in an oven.

  5. Cook slowly over moderate heat for approximately 1 to 1.5 hours depending on the size, turning occasionally if necessary for even cooking.

  6. About 10 to 15 minutes before the end, brush the roast with honey (or your sweet-spice glaze) to create a lightly caramelized, warm and fragrant crust.

  7. After removing the meat from the barbecue, let it rest for a few minutes (5 to 10 min) before cutting it: this allows the juices to redistribute and guarantees tender and juicy meat.
