Ingredients (for 4 people)
2 beautiful trout
1 courgette
2 tomatoes
A few basil leaves
½ red bell pepper
1 shallot
1 lemon
50g of olive oil
20g of coarse salt with oregano
20g of white wine (Chardonnet)
Recipe preparation
- Turn on the oven and bring it up to about 300°C. The fish will cook as the temperature drops.
- Brush the bottom of the dish with a little olive oil.
- Place the fish in the dish
- Cut the zucchini into approximately 2 x 2 cm cubes and place them in the dish
Chef's tip: if there are large seeds, remember to remove the core of the zucchini
- Cut the pepper into thin strips and place it in the dish with the fish and the courgette.
- Next, cut the tomatoes into small cubes and put them in the dish.
- Chop the shallot before adding it to the dish with the other ingredients.
- Add the olive oil in a thin stream, then the white wine.
- Sprinkle with the salt and oregano mixture.
- Add the roughly chopped fresh basil.
- Finish by zesting the lemon over the dish before squeezing it.
- Check the oven temperature, it should be around 180°C-200°C, and then put it in the oven.
Chef's tip: close the oven door flap; there must be no flames during cooking.
- After 30 minutes of cooking, it's time to take the fish out of the oven.
Serve the fish with the vegetables straight from the oven. You can serve it with rice for a more substantial meal. Now all you have to do is sit back and enjoy, and don't forget some fresh bread for soaking up the juices! Bon appétit!
