What ingredients are needed for a successful chestnut bread?  

For a loaf of bread weighing approximately 800g:  

  • 300g of T65 wheat flour  

  • 200 g of flour of chestnuts  

  • 10 g of salt  

  • 1 sachet of baker's yeast (or 15g of fresh yeast)  

  • 350 ml water lukewarm  

  • 1 tablespoon of olive oil (optional)  

  • A few crumbled cooked chestnuts (optional)

What is the ideal temperature for baking bread in a wood-fired oven?  

The perfect temperature is between 220 and 240°C .  

  • Light the fire 1 hour to 1 hour 30 minutes before cooking to properly heat the dome.  

  • Allow the temperature to drop to avoid a direct flame.  

  • Place the bread on the lightly floured baking sheet.  

Cooking time:  approximately 30 to 35 minutes.
