How to make good coals on a barbecue?
The technique for starting a wood-fired barbecue is not the same as for a charcoal barbecue. Therefore, if you have a wood-fired barbecue, several steps must be taken into account:
- Place newspaper at the bottom of the barbecue
- Add kindling on top, forming a mountain with twigs and other pieces of crates.
- Light the newspaper and let the kindling catch fire
- Blow on the fire until it catches well
- Add kindling as needed
Once the embers are formed, the cooking can begin!
How to cook on a barbecue without burning?
To avoid burning food, you can choose an indirect cooking method. The food isn't in direct contact with the coals, which prevents the meat from burning while it's still raw inside. Achieving a successful barbecue is therefore much easier with a wood-fired grill.
That being said, controlling the temperature and cooking time is, of course, always essential for successful barbecue cooking.
What is the best way to cook on a barbecue?
There are several cooking techniques and each of them has its advantages.
Indirect cooking
As mentioned earlier, a wood-fired oven allows for indirect cooking, which has the advantage of not cooking directly on the embers and offers a multitude of cooking methods. Plenty of options to choose from.
The papillotes
Cooking in parchment paper is a well-known method in the oven, but it can also be used on the barbecue. Fish, vegetables, and herbs are often used in them for flavorful recipes and tender, juicy food.
Barbecue
Grilling food on a barbecue is essential for successful barbecuing. Meat, vegetables, and fish can all be grilled to enjoy flavors that can only be achieved with this cooking method.
A barbecue roast
You can also perfectly well barbecue a roast. Placed in the oven with vegetables, the roast will slowly cook over the wood fire. The same method can be used with a chicken.
Make a marinade
Marinating adds flavor and tenderizes meat, poultry, fish, seafood, and vegetables. It is prepared in advance so the meat can then be grilled.
To smoke
Finally, smoking uses the smoke emitted by the barbecue to give it that characteristic and appreciable taste.
