Temperature issue
Wood-fired ovens are equipped with insulated lids that allow them to heat up quickly and retain heat for a long time. Furthermore, their air ventilation system can be opened or closed at will by operating the chimney or the oven door.
Quick cooking
Rapid cooking in a wood-fired oven is possible thanks to its ability to reach very high temperatures, up to 350°C. This allows you to cook dishes in a very short time. Ideal for preparing a pizza , cooking salmon, crozet gratin , or other meat dishes.
Chef's tip:
Be careful to leave the oven open to allow the smoke to escape and also to better monitor the cooking process.
Slow cooking
Slow cooking is ideal after a quick, high-temperature recipe. It allows you to take advantage of the residual heat to let it cool down before baking bread, sweet tarts , and saucy dishes. Enjoy your grandmother's recipes!
Chef's tip:
Most slow-cooking recipes are prepared with the door closed.
Wood-fired oven smoking
Smoking food in a wood-fired oven is possible, and it turns out to be very easy. Here too, you'll need to take your time, up to 3 hours to prepare a smoked pork tenderloin, for example. Then, you'll need 3 weeks before you can enjoy it. But it's well worth the effort.
Chef's tip:
For smoking, it will be necessary to extinguish the flames and close the door while leaving the gaps open.
