What are the differences between baking bread and pizza?

You've decided to bake traditionally by purchasing a wood-fired oven . If you want to use it to bake both bread and pizzas, what are the differences in cooking time between these delicious specialties? Temperature, cooking time… Our answers and tips to make your mouth water.
Bread oven : long baking time at a constant temperature

- Oven temperature: The bread bakes at approximately 300°C
- Cooking time: 35 to 40 minutes depending on the shape, size and number of loaves.
This is a "downward" baking method, without any additional heat input during the bread's cooking process. The bread bakes in just over half an hour using the heat present in the oven cavity and that radiated by the baking stones.
Pizza oven : fast cooking at high temperature

- Oven temperature: the pizza cooks between 350°C and 400°C
- Cooking time: 2 to 4 minutes depending on the ingredients.
Pizza cooks quickly, which requires a constantly burning fire. In a pizza oven, the goal is to reach a high temperature rapidly, but without maintaining it for long, as 2 to 4 minutes is enough to cook a pizza. In a pizza oven, the fire is lit with the door closed to increase the temperature even faster. The fumes escape through the exhaust duct located in the oven chamber.
