Recipe for barbecued duck breast with honey, orange and rosemary

Discover our recipe for duck breast marinated with honey, orange juice, and rosemary, slowly cooked over embers. A caramelized, tender, and flavorful meat, perfect for a spring meal on the terrace.
    Ingredients
    • 2 duck breasts
    • 2 tablespoons honey
    • Juice of one orange + the zest
    • 2 sprigs of rosemary
    • 2 tablespoons soy sauce
    • 1 garlic clove, chopped
    • Black pepper (salt after cooking)
    Instructions
    1. Mix the marinade ingredients (honey, orange juice and zest, soy sauce, garlic, rosemary).
    2. Score the skin of the duck breasts in a criss-cross pattern with a knife without cutting into the flesh. Place in a dish, pour over the marinade, cover and leave for 2 to 4 hours in a cool place (or overnight).
    3. Heat the barbecue to medium heat (180–200°C). Drain the duck breasts and keep the marinade.
    4. Cook skin side down first for 6 to 8 minutes to render the fat without burning. Turn over and cook for 4 to 5 minutes on the flesh side. Baste regularly with the marinade.
    5. Leave to rest for 5 minutes under a sheet of foil before slicing thinly.
