Ingredients
1.5 kg firm-fleshed potatoes
300 g smoked bacon lardons
2 yellow onions
1 Reblochon (about 450 g)
20 cl thick crème fraîche
10 cl dry white wine
1 garlic clove
Salt and pepper
Instructions
Preheat the wood-fired oven to 180–200°C.
Peel the potatoes and cut into thick slices. Boil them in salted water for 10 minutes. Drain.
Slice the onions and fry them with the bacon lardons in a pan until golden.
Rub a gratin dish with the garlic clove. Arrange a layer of potatoes, add onions and lardons. Repeat to form several layers.
Pour over the white wine and crème fraîche. Cut the Reblochon in half through its thickness and place the two halves on top, rind side up.
Bake for about 25 minutes. The Reblochon should be well melted and lightly browned. Leave to rest for a few minutes before serving.
