Ingredients
2 duck breasts
2 tablespoons honey
Juice of one orange + the zest
2 sprigs of rosemary
2 tablespoons soy sauce
1 garlic clove, chopped
Black pepper (salt after cooking)
Instructions
Mix the marinade ingredients (honey, orange juice and zest, soy sauce, garlic, rosemary).
Score the skin of the duck breasts in a criss-cross pattern with a knife without cutting into the flesh. Place in a dish, pour over the marinade, cover and leave for 2 to 4 hours in a cool place (or overnight).
Heat the barbecue to medium heat (180–200°C). Drain the duck breasts and keep the marinade.
Cook skin side down first for 6 to 8 minutes to render the fat without burning. Turn over and cook for 4 to 5 minutes on the flesh side. Baste regularly with the marinade.
Leave to rest for 5 minutes under a sheet of foil before slicing thinly.
