Wood-fired oven recipe: Provençal tian revisited by My Barbecue

Ingredients (for 4 people):

- 2 eggplants

- 3 courgettes

- 4 tomatoes

- 2 red onions

- 3 cloves of garlic

- Olive oil

- Herbs of Provence

- Salt, pepper

Recipe preparation:
  1. Preheat your Maximus wood-fired oven to 180°C.
  2. Wash and slice all the vegetables into thin rounds.
  3. In an ovenproof dish, arrange the vegetable slices in alternating layers to create a pretty pattern.
  4. Mince the garlic and sprinkle it over the vegetables.
  5. Drizzle generously with olive oil and sprinkle with herbes de Provence, salt and pepper.
  6. Bake for 45 minutes to 1 hour, until the vegetables are tender and lightly browned.

The chef's advice:

For an even more flavorful tian, add some crushed anchovies to your olive oil before drizzling it over the vegetables. Their taste will infuse the dish for an explosion of Mediterranean flavors!

Barbecue recipe: Marinated vegetable skewers

Ingredients (for 4 people):

- 2 bell peppers (red and yellow)

- 1 courgette

- 1 eggplant

- 16 cherry tomatoes

- 1 red onion

- For the marinade: olive oil, lemon juice, garlic, thyme, rosemary, salt, pepper

Recipe preparation:
  1. Prepare your barbecue .
  2. Cut all the vegetables into large pieces (except the cherry tomatoes).
  3. Prepare the marinade by mixing all the ingredients in a bowl.
