Maximus Winter Pizza Recipe

Ingredients (for 2 pizzas)

Homemade pizza dough
  • 500 g of flour
  • 10 g of salt
  • 10g of fresh baker's yeast
  • 300 ml of lukewarm water
  • 2 tablespoons of olive oil
Winter pizza topping
  • 150g of thick crème fraîche
  • 100g of mozzarella
  • 100g of raclette cheese (or reblochon for more character)
  • 80g of smoked bacon or raw ham
  • 1 finely chopped red onion
  • 8 sliced ​​fresh button mushrooms
  • A few crushed nuts
  • Black pepper, thyme and rosemary


Preparation and baking in the Maximus wood-fired oven

1. Preparing the dough
  1. Mix the flour and salt in a large bowl.
  2. Dissolve the yeast in lukewarm water and gradually add it to the flour.
  3. Knead until you obtain a smooth and supple dough.
  4. Stir in the olive oil, then cover and let it rest for 1 hour 30 minutes in a warm place.
2 Lighting the Maximus wood-fired oven

Tip & trick : use dry beech or oak wood for optimal combustion and an unbeatable smoky flavor.

  1. Place a few kindling logs in the oven and light them with natural firelighters.
  2. Allow to heat up for approximately 30 minutes , until it reaches 350-400°C .
  3. Push the coals to the side for indirect cooking and place the pizza stone in position.
3. Assembling and baking the pizza
  1. Roll out the dough thinly and place it on a floured shovel.
  2. Spread a thin layer of crème fraîche over the pastry.
  3. Add the mozzarella, raclette cheese, bacon, onion and mushrooms.
  4. Place the pizza in the Maximus oven , and let it cook for approximately 90 seconds to 2 minutes , turning it halfway through cooking.
  5. Add the crushed walnuts and a pinch of black pepper before serving.
Tips for making perfect pizzas in a Maximus wood-fired oven


Let the dough rest for 24 hours in the fridge for better texture and a more developed taste.
Do not overload the filling for even cooking.
Rotate the pizza every 30 seconds to prevent it from burning.
Add delicate ingredients (arugula, walnuts, prosciutto) after cooking to preserve their flavor and texture.
Use a floured peel to easily put your pizzas in the oven.
