Maximus Winter Pizza Recipe
Ingredients (for 2 pizzas)
Homemade pizza dough
- 500 g of flour
- 10 g of salt
- 10g of fresh baker's yeast
- 300 ml of lukewarm water
- 2 tablespoons of olive oil
Winter pizza topping
- 150g of thick crème fraîche
- 100g of mozzarella
- 100g of raclette cheese (or reblochon for more character)
- 80g of smoked bacon or raw ham
- 1 finely chopped red onion
- 8 sliced fresh button mushrooms
- A few crushed nuts
- Black pepper, thyme and rosemary
Preparation and baking in the Maximus wood-fired oven
1. Preparing the dough
- Mix the flour and salt in a large bowl.
- Dissolve the yeast in lukewarm water and gradually add it to the flour.
- Knead until you obtain a smooth and supple dough.
- Stir in the olive oil, then cover and let it rest for 1 hour 30 minutes in a warm place.

- Place a few kindling logs in the oven and light them with natural firelighters.
- Allow to heat up for approximately 30 minutes , until it reaches 350-400°C .
- Push the coals to the side for indirect cooking and place the pizza stone in position.
3. Assembling and baking the pizza
- Roll out the dough thinly and place it on a floured shovel.
- Spread a thin layer of crème fraîche over the pastry.
- Add the mozzarella, raclette cheese, bacon, onion and mushrooms.
- Place the pizza in the Maximus oven , and let it cook for approximately 90 seconds to 2 minutes , turning it halfway through cooking.
- Add the crushed walnuts and a pinch of black pepper before serving.
