Recipe for a forest-style pizza with autumn mushrooms

Recipe ingredients:

- 250g of pizza dough

- 200g of mixed mushrooms (porcini, chanterelles, girolles)

- 100g of grated mozzarella

- 50g of fresh goat cheese

- 2 cloves of garlic, finely chopped

- 1 tablespoon of thick crème fraîche

- A few sprigs of fresh thyme

- Olive oil

- Salt and pepper

Pizza preparation:

  1. Prepare your Maximus wood-fired oven:

Turn on the oven and let it heat up to a temperature of 300°C. This intense heat, typical of wood-fired ovens, allows you to obtain a perfectly crispy pizza in just a few minutes.

  1. Preparing the mushrooms:

Thoroughly clean the autumn mushrooms, then slice them. Heat a little olive oil in a pan, add the chopped garlic, then sauté the mushrooms with salt, pepper and sprigs of thyme until golden brown and the cooking liquid has evaporated.

  1. Assembling the pizza:

Roll out the pizza dough on a floured surface. Spread a thin layer of crème fraîche over the dough, then add the grated mozzarella. Arrange the sautéed mushrooms on top and sprinkle with pieces of fresh goat cheese.

  1. Cooking :

Place the pizza in the hot wood-fired oven and cook for approximately 4 to 5 minutes, until the crust is golden brown and the cheese is melted.

  1. Finishing :

Once out of the oven, drizzle with a little olive oil and add a few sprigs of fresh thyme for decoration.

Ingredients :

- 400g of assorted mushrooms (oyster mushrooms, porcini mushrooms, hedgehog mushrooms)

- 50g of crushed walnuts

- 100g of grated Parmesan cheese

- 2 cloves of chopped garlic

- 200 ml of liquid fresh cream

- 1 tablespoon of chopped fresh parsley

- 1 tablespoon of butter

- Salt and pepper

Preparation :

Once out of the oven, sprinkle the gratin with chopped parsley to add a touch of freshness.
