Christmas recipe: honey pork roast on the barbecue grill

Ingredients (for 6-8 people)

  • 1 pork loin roast of about 1 kg

  • 2 to 3 tablespoons of olive oil

  • Spices of your choice (for example cinnamon, cloves, ginger — according to your taste)

  • 2 tablespoons of honey (or a sweet + spicy glaze as you like)

  • Salt, pepper

Recipe preparation

  1. Take the meat out of the refrigerator about 30 to 60 minutes before cooking to avoid thermal shock and ensure even cooking.

  2. Brush the roast with olive oil, salt and pepper it, then apply the spices to flavor the meat.

  3. Preheat your barbecue grill: if you are using a charcoal barbecue grill, wait until the embers are glowing red without flames.

  4. Place the roast on the grill. For a nice cook, use indirect cooking: place the embers or fire on one side (or turn off the burners under the meat) so that the heat cooks the meat slowly, like in an oven.

  5. Let it cook slowly, at moderate heat, for about 1 to 1.5 hours depending on size, turning occasionally if needed for even cooking.

  6. About 10 to 15 minutes before the end, brush the roast with honey (or your sweet-spice glaze) to create a slightly caramelized, warm, and fragrant crust.

  7. When you take the roast off the barbecue grill, let the meat rest for a few minutes (5 to 10 min) before slicing: this allows the juices to redistribute and guarantees tender, juicy meat.
