Our tips for cooking winter vegetables on the barbecue

1. Prepare your vegetables like a chef

Winter vegetables such as cauliflower, parsnips, butternut squash, carrots or Brussels sprouts require special preparation to be enhanced on the barbecue.

  • Cut them evenly to ensure they cook evenly.
  • Marinade or flavored oil : add a touch of olive oil, rosemary, or a hint of smoked paprika to enhance the flavors.

2. Use baskets or skewers for easy cooking

To prevent small vegetables (such as Brussels sprouts or pieces of squash) from falling through the wire mesh:

  • Opt for a grill basket or metal skewers .
  • Alternate the pieces of vegetables on the skewers for balanced cooking and colorful presentations.

3. Master indirect cooking

Indirect cooking is ideal for vegetables that require longer cooking times, such as sweet potatoes or celeriac. Place them next to the coals, not directly above, so they cook slowly and retain their tenderness.

4. Play with the smoke for unique aromas

Add a handful of wood chips (flavored with apple or hickory) to the embers to infuse your vegetables with smoky aromas. Roasted butternut squash and beets become particularly flavorful with this technique.

5. Don't forget the finishing touch: the garnish!

Once cooked, add a fresh topping :

  • Fresh herbs such as parsley or coriander.
  • A pinch of fleur de sel or a squeeze of lemon to enhance the flavors.
