Our recipe for pike cooked in a wood-fired oven

This simple recipe highlights the delicate flavor of pike and offers a delicious alternative to trout.

Ingredients :
  • 1 whole pike, gutted and scaled
  • 1 lemon, sliced
  • 2 sprigs of fresh rosemary
  • 4 tablespoons of extra virgin olive oil
  • Salt and freshly ground black pepper
Cooking time and temperature:
  • Approximately 25-30 minutes (time may vary depending on the size of the pike)
  • Preheat your wood-fired oven to a temperature of approximately 200°C.
Preparation steps for this recipe:

Wash the pike inside and out, then gently dry it with absorbent paper.

Make a few diagonal incisions on both sides of the pike to facilitate cooking.

Season the inside and outside of the pike with salt and pepper. Place a few lemon slices inside, add sprigs of rosemary and drizzle with olive oil.

Place the pike on a baking tray suitable for a wood-fired oven .

Slide the tray into the preheated wood-fired oven and cook for 25 to 30 minutes, checking the cooking regularly.

The pike is ready when the flesh is opaque and flakes easily with a fork.

To prevent the pike from sticking to the cooking grate, you can lightly brush it with olive oil before placing the fish on it.
