Shortcrust pastry:
250g of flour
125g of cold butter, cut into cubes
1 pinch of salt
50ml of cold water
1 egg yolk (optional)

200g of seasonal mushrooms (chanterelles, porcini)
1 small pumpkin
100g of fresh goat cheese
2 shallots
Fresh thyme

Mix the flour and salt in a bowl.
